Desserts easy, today: Almond bites

This dish is cooked with a base of desserts and belongs to the dishes of the traditional kitchen. As a rule, it is consumed mainly during the whole year, and diners are usually served as Dessert.
These almond nuggets are really delicious. In addition, they are very simple and quick to make and are a perfect accompaniment to our breakfasts and snacks.


170 gr. raw ground almond
150 gr. of sugar
2 eggs
1 egg yolk
the zest of 1 lemon
The juice of half a lemon
1 tablespoon butter.

So we cook it

Preheat the oven to 170ºC.
While the oven is heating, beat the two eggs with the yolk in a bowl. Once everything is well beaten, we add the rest of the ingredients, continuing to beat, until obtaining a smooth and homogeneous dough.
Cover the dough with transparent film and reserve in the refrigerator for 1 hour.
Fill some individual molds (previously spread with butter and flour) with the sponge cake and bake until golden brown.

 Tricks and tips

To know if the cake is cooked, insert a needle inside. If it comes out clean, then the cake will be ready to be taken out of the oven.

The ingredients used in the preparation of this cake mainly provide carbohydrates from sugar, as well as high-quality proteins from the eggs.
